Recipe : Chicken Pepper Fry

Chicken Pepper Fry

Ingredients
600 gms boneless chicken
10 tbsp oil
15 onions, chopped (shallots)
1 tsp mustard seeds
20 gms peppercorns, crushed
1 tbsp coconut oil
2 sprigs curry leaves

For the marinade:
4 cardamom
4 sticks of cinnamon
10 cloves
1/2 tsp cumin seeds
1 tsp coriander seeds
7 garlic cloves
1” ginger
3 red chillies
1/2 lemon
salt to taste

Method
- Blend the marinade ingredients into a fine paste and marinate the chicken in this paste for 20 minutes.
- Deep fry the chicken pieces to a golden brown.
- Heat oil and put in mustard seeds. Put in the crushed peppercorns, curry leaves, shallots and stir fry till the shallots turn golden brown.
- Add the fried chicken. Toss and turn till all the pieces are coated well with the pepper.
